Is it better to use fresh seeds or packaged seeds when planting a vegetable garden?

Jobs in a restaurant and I can get 100 's gradice seeds of tomatoes, pepper, eggplant, etc.… daily for free. I want to plant any in the country to start my vegetable garden, work well?
